Crispy Bacon Muffins

9oz bacon, cooked then divided

7 Tbsp oil, divided

1 onion, finely chopped

2 cups flour

1 Tbsp baking powder

1/8 tsp salt

black pepper

2 lrg eggs

1 cup buttermilk

 

Preheat oven to 400 degrees.  Grease a 12-cup muffin tin or line with muffine liners.  Chop bacon, reserve 3 strips for garnish.  Cut each of the reserved bacon into four pieces.  Heat oil in skillet.  Add onion and bacon, cook until crispy.  Remove from heat.  

 

In large bowl, sift together flour, bakng powder, salt, and pepper, to taste.  

 

In Medium bowl lightly beat eggs, butter, milk, and remaining oil.  

 

Make a well in the dry ingredients and pour in the liquid ingredients.  Add bacon and onion mixture, stir in gently and do not overmix.  

 

Spoon batter into the muffin tins.  Place a piece of the reserved bacon (previously cut into a dozen pieces) into each muffin.  

 

Bake for about 20 minutes until golden brown.  Cool for 5 minutes and serve warm.
