Brown Sugar Muffins

1 ½ cups flour

¼ cup sugar

¼ tsp salt

½ tsp cinnamon

3 ½ tsp baking powder

¼ cup light brown sugar, packed

1 egg, lightly beaten

½ cup olive oil

½ cup milk

Preheat oven to 400 degrees.  In a large bowl sift together flour, sugar, salt, cinnamon, and baking powder.  Carefully stir in the brown sugar.  Add the egg, olive oil, and milk.  Stir enough to moisten the dry ingredients.  Place paper cups in muffin tins and fill about half way full.  Bake for 20 minutes or until toothpick test comes out clean.
