Flour Tortillas
¼ cup vegetable shortening
3 cups flour, unsifted
2 tsp. baking powder
¾ tsp. salt
about 1 cup warm water
Stir together all except water. Stir in enough warm water to form a crumbly dough. Then work dough with hands until it holds together. Knead until smooth. Divide into 12 smooth balls. Cover lightly with plastic wrap and let rest about 15 minutes. Flatten one ball at a time into 4 or 5 inch patty, then roll into 9 inch round. Lay onto heavy griddle. Tiny blisters will appear, turn tortilla over. Stack cooked tortillas inside a folded cloth towel. Makes about 1 dozen.
