Crunchy Peanut Butter Muffins

2 cups flour

1 Tbsp baking powder

1/8 tsp salt

1/2 cup dark brown sugar, firmly packed

2 lrg eggs

3/4 milk

6 Tbsp melted butter

1/2 cup peanut butter, heaping

 

peanut topping:

1/3 cup unsalted roasted peanuts

3 Tbsp brown sugar

Finely chop peanuts and mix together with brown sugar.  Set aside.

 

 

Preheat oven to 400 degrees.  Grease 12cup muffin pan or line with cupcake liners.  

 

In a large bowl, sift together the dry ingredients: flour, baking powder, and salt into a large bowl.  Stir in brown sugar. Set aside.

 

In a medium sized bowl, lightly beat the eggs, milk, oil, and peanut butter.  

 

Make a well in the center of the dry mixture and pour in the liquid mixture. Stir together until combined.  Do not over mix.  

Spoon the batter into the muffin tin.  Sprinkle peanut and brown sugar topping over each muffin.  Baked for 20 minutes until golden brown and firm.  Cool for 5 minutes in the pan.  Then serve warm or transfer to rack to completely cool.  Makes 1 dozen
