Hawaiian Coconut Bread

 

½ cup butter or margarine, softened

1 cup sugar

2 cups flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

2 eggs

½ cup mashed bananas

½ cup crushed pineapple

¼ shredded coconut

 

Preheat oven to 350 degrees.  Cream the butter and sugar in large bowl until light and fluffy.  Add the flour, baking powder, baking soda, salt, eggs, bananas, pineapple, and coconut, beat until well blended.  Pour the batter into a greased 5x9 inch loaf pan.  Bake for 60 to 70 minutes.  Cool completely before slicing.
