Raspberry Pops

 

2 ½ cups fresh raspberries, reserve 1 cup

1 cup raspberry juice drink (Welch’s)

2 Tbsp light corn syrup or Crème de Cassis (ALCOHOL, WOOHOO)

 

Combine 1 ½ cups fresh raspberries, raspberry juice, and corn syrup in the blender and process until smooth.  Fold the remainder cup of raspberries into the blended mixture.  Add 1 or 2 raspberries into each popsicle mold.  Spoon mixture into molds or 3 oz. paper cups.  Cover and freeze until firm.
