Toffee Bars

 

Salted saltine crackers

1 cup butter, not margarine

1 cup packed light brown sugar

1 (6oz) package semisweet chocolate chips

 

Preheat oven to 350 degrees.  Grease a cookie sheet.  Arrange one layer of the saltine crackers, salt side up, on the cookie sheet, completely covering the sheet.  Heat the butter in a saucepan over medium heat.  Add the brown sugar, mix well.  Bring the mixture to a boil, stirring constantly.  Remove from heat, continue stirring for another minute.  Pour the hot mixture over the saltines, spreading evenly.  Sprinkle with the chocolate chips.  Bake for 5 minutes.  Remove from the oven and spread the chocolate evenly.  Let cool, covered in the refrigerator for 1 hour or until the chocolate is firm.  Cut into bars.
